We saved rhubarb from our garden to make this cookie!! This classic flavour combination comes together beautifully inside a dough made with custard powder and fresh pureed Rhuabrb which gives it a beautiful yellow hue. Packed with cream cheese chipits and freeze-dried strawberries, STUFFED with a strawberry rhubarb bar, and topped with a cinnamon oat crumb, this cookie is light and delightful!
