Mmmm, this is a classic ginger molasses cookie, but elevated! It's stuffed with cookie butter, which is a spread made with spiced Biscoff cookies, making the most PERFECT flavour combo! Best of all, this cookie is egg and dairy free! And for those of us that can eat those things, the molasses gives this cookie a lovely richness - I promise you won't miss the butter at all!
PS. All stuffed cookies FREEZE well! Just take them out to come to room temperature an hour before you want them, or simply pop them in the oven at 350 degrees for 4-5 minutes, OR if you're like me, you can also eat them directly from the freezer!
